Easy 3 Ingredient Tofu Scramble

January 8, 2015 by Ceara 43 Comments

tofu scramble

Since I’ve been home in Toronto my whole routine has been shot out the window. And you know what? It’s kind of nice to have a nice change of pace and switch things up a bit! My chia-seed morning oatmeal has been swapped for pancakes, scrambles, monkey breads and fun family brunches. It’s been great and I’m going to be totally honest I have a new obsession y’all and it comes in the form of a Super Easy Tofu Scramble made with only THREE ingredients!

tofu scramble

I can’t take total credit for this recipe – my Stepmom and little sister actually made it for family brunch up a couple years ago and I was more than a little bit suspicious. Tofu? In a scramble? I know, right. But after one bite I was hooked. Now our Easy Tofu Scramble is the centerpiece of our Sunday family brunches – alongside everything else that we always manage to whip up!

Below is a photo from our last Sunday Brunch – so much goodness in one plate! If you look closely you can see the Easy Tofu Scramble in the middle in between the poached tomato with hemp seeds and sauteed mushrooms! We also ended up making a Mediterranean Zatar Salad, Mango Berry Fruit Salad, Blueberry Spelt Waffles and marinated Vegan Mozzarella in Truffle Oil. It’s good to be home 😉 #EatHappyLiveHappy

And this Easy Tofu Scramble is so easy I’m almost embarrassed sharing it. It’s made of:

Extra Firm Tofu.

Ready-made Bruschetta.

Spinach.

And that’s it! But some of the easiest recipes are the best, amiright? I love making a complicated meal once in a while, but the easy, simple recipes like this one always end up being the staples in my kitchen that I always come back to. This Easy Tofu Scramble makes the perfect savory, high-protein, low fat and healthy breakfast!

I love having tofu scramble for brunch. The recipe I’ve been using has at least double the ingredients. I can’t wait to try this one – I think using bruschetta is genius!

What a wonderfully delicious, wholesome and EASY breakfast! I really like tofu, and I’m so stoked about how quick this is to make! The idea of using bruschetta to pack a giant wallop of flavor from just one quick-and-easy ingredient is brilliant! Definitely pinning this … and yes, my tummy is really and truly grumbling as I type this (lol!). 😀

Looks so delicious and colorful Ceara! You KNOW I love simple few ingredient recipes and this one looks fab. I don’t actually eat tofu….my hubby can’t eat it and I must admit, I’m weirded out by the texture, lol. But I swear if anybody can make it look delicious, you sure did with this recipe!!

Hi, what is bruschetta? Clearly it’s not Italian bread? ( I live in New Zealand so need a translator!)

This looks good, thanks for posting it.

Hi Sue! Yes, by Bruschetta I mean the tomato topping on the italian bread. In Canada and the States they sell just the tomato topping for the bread, ready-made and that’s what I used in this recipe. You could make a simple bruschetta at home using tomato, garlic and onion. Hope you enjoy this scramble if you end up making it! Thanks for stopping by and the kind words!

I have recently just started getting in to tofu, but I haven’t had it in a scramble. Looking forward to trying that.

Hi Ceara! Sounds like Toronto was amazing….not to mention fun eating! Okay, I’ve added spinach to my scrambled eggs. Love it. And I’ve heard of adding bruschetta to eggs, but have yet to try, but bruschetta to tofu is a totally new concept as it having tofu for breakfast to me. Thanks for introducing me to it! Sounds like the perfect solution for a high protein, low carb breakfast to me =)
