Double Chocolate Vegan Donuts

February 7, 2016

vegan donuts

Double Chocolate Vegan Donuts that are SO incredibly rich and decadent (I’ve incorporated chocolate into this recipe in THREE different ways guys)… you will want to cry after your first bite. But actually, the entire household here went crazy for these baked (not fried!) donuts. Just don’t tell the unsuspecting people you’re serving these vegan donuts too they are made with aquafaba (a first here on Ceara’s Kitchen and I am obsesssed!!) and are completely gluten free. Nobody will ever be the wiser!

vegan donuts

Do you own a donut pan? I got one this past Christmas and I FINALLY got the chance to make donuts this week. I love making muffins, but making homemade donuts is alll kinds of fun. All you need is a donut pan (like this one) and you’ll be wanting to make donuts night and day. No frying, refined oil or refined flours required!

Dipping the fresh-from-the-oven gluten free vegan donuts in the warm, melted chocolate was the best part of making these donuts. I may or may not have gotten chocolate all over my camera equipment. Chocolate dipping is a difficult job, but somebody’s gotta do it.

The final step is adding the SPRINKLES!! My younger brother helped cover these TRIPLE Chocolate Donuts in sprinkles with me because everybody (even adults) need their sprinkle fix sometimes. If you make these Vegan Donuts at home, I love hearing your feedback. Leave a comment below or snap a photo, share it on instagram and tag #CearasKitchen.

These Double Chocolate Vegan Donuts are incredibly rich, moist and decadent. Baked and dipped in a thick chocolate sauce that hardens once the donuts cool down. Fresh from the oven, dipped in chocolate and sprinkles... it's hard not to eat these donuts all at once!
Author: Ceara
Recipe type: Dessert
Serves: 12 donuts
Ingredients
Dry Ingredients
  • 1½ cup oat flour
  • 1 cup hazelnut meal (or almond meal)
  • 4 tbsp tapioca starch
  • 3 tsp baking powder
  • ½ tsp sea salt
Wet Ingredients
  • 1 cup unsweetened applesauce
  • ½ cup aquafaba (chickpea can liquid)
  • ½ cup + 2 tbsp coconut sugar
  • 2 tsp vanilla extract
  • 1 tbsp unsulfured molasses
  • ¼ cup + 2 tbsp cacao powder (or high quality cocoa powder)
  • ½ tbsp instant coffee*
  • ½ cup chocolate chips
Chocolate Sauce
  • ½ cup chocolate chips
  • ½ tbsp soya milk
  • Sprinkles (optional - these sprinkles are vegan and gluten free)
Directions
  1. Pre-heat oven to 355F/180C. Lightly grease a donut pan with coconut oil or non-stick cooking spray.
  2. In a medium size mixing bowl, measure and whisk together dry ingredients (oat flour through to sea salt) until evenly dispersed. Note: Lightly fluff your flours with a spoon before measuring them.
  3. Add applesauce, aquafaba, coconut sugar, vanilla extract and unsulfured molasses to a large bowl. Whisk together. Whisk in the cocoa powder until a thick-ish chocolate mixture is formed.
  4. Fold the dry ingredients into the wet ingredients and stir together until a thick batter is formed. You do not have to worry about over-mixing because there is no gluten in the batter. Stir in the chocolate chips.
  5. With a spoon, scoop the donut batter into the donut pan to almost the top of the pan. There is approximately ¼ heaping cup of batter in each donut. Bake for 12- 13 minutes, the amount of baking time with depend on your oven. The donuts are ready when an inserted toothpick comes out almost clear. Leave to cool in pan for 2-3 minutes before removing and transferring to a cooling rack.
  6. While the donuts are cooling, in 15 second increments, melt the chocolate chips and soya milk together in the microwave in a medium size bowl (if you do not have a microwave, use the double boiler method to melt the chocolate chips).
  7. Stir the chocolate sauce. Dip the donuts in the melted chocolate sauce one by one. Smooth out the chocolate with the back of a spoon. Sprinkle the optional sprinkles on top. The chocolate will harden once the donuts have cooled down. Enjoy!
Notes
1) Replace coconut sugar with cane sugar or light brown sugar.
2) Feel free to use naturally decaffeinated instant coffee.
3) Make sure all your ingredients are certified vegan and gluten free if necessary.
4) It's really important to leave your donuts to cool in the donut pan for 2-3 minutes before transferring them to a cooling rack so they stay together.
5) You can make your own hazelnut/almond meal and oat flour by blending together oats or whole hazelnuts/almonds in the blender until a fine flour-like consistency is formed.
6) I used a regular size donut pan that makes six donuts at a time. If you are using a mini donut pan, you will have to adjust the baking time to around 7 minutes.

I love the sound of these Ceara!!! The more chocolate the better if you ask me <3 And that hazelnut meal in the dough sounds amazing, plus the little bit of caramel flavor from the molasses, yum! Amazing as always 🙂

Wow Ceara, these are a smile-inducer if there ever was one! So much chocolate and SPRINKLES!!! And I love that they are gluten and oil free. And my camera equipment is so sticky and messy, things with frosting are the worst for that. One little adjustment and sticky fingers all over again! But so very worth it! Ahhhh the chocolate, need one now!

Ahhh!! Perfect Ceara!!! Chocolate baked circles of yum and the sprinkles should never be optional 😉
