And now that the summer is coming to an end, I am looking forward to settling back into life in Belgium with J in our cozy little apartment together. In celebration of summertime, summer nights and the sizzling summer heat (which I never seem to get enough of) I am sharing with you one of my favourite Mango Banana “ice cream” recipes. I discovered banana ‘ice cream’ at the beginning of the summertime and quickly looked forward to this ice cold & naturally sweetened treat after a long run or day in the summer heat.
This Mango Banana Coconut Ice Cream could not be easier to throw together: the nutrient-rich frozen mango and bananas are magically processed into a soft serve ice cream that could easily compete with the “real thing” without the addition of traditional addition of cream, sugar and eggs. This refreshing creamy mango and banana dream is made even creamier and tastier with the addition of light coconut milk and a splash of vanilla for good measure.
And no need to worry, this Mango Banana Coconut Ice Cream does not require an ice cream maker. I have made this dish in both the food processor and with a hand held blender – making this soft serve perfect for those who do not have space for extra kitchen appliances like ice cream machines. One taste of this Mango Banana Coconut Soft Serve and you may never buy store bought ice cream again 😉
Just make sure to eat it quickly or else you might end up with a Mango Banana Coconut milkshake – no complaints here 😉
