Can you believe that the summer is almost done? I can. The weather here has been unbelievably chilly for this time of year. Fall is-a-comin’ and to be honest
And now that the summer is coming to an end, I am looking forward to settling back into life in Belgium with J in our cozy little apartment together. In celebration of summertime, summer nights and the sizzling summer heat (which I never seem to get enough of) I am sharing with you one of my favourite Mango Banana “ice cream” recipes. I discovered banana ‘ice cream’ at the beginning of the summertime and quickly looked forward to this ice cold & naturally sweetened treat after a long run or day in the summer heat.
This Mango Banana Coconut Ice Cream could not be easier to throw together: the nutrient-rich frozen mango and bananas are magically processed into a soft serve ice cream that could easily compete with the “real thing” without the addition of traditional addition of cream, sugar and eggs. This refreshing creamy mango and banana dream is made even creamier and tastier with the addition of light coconut milk and a splash of vanilla for good measure.
And no need to worry, this Mango Banana Coconut Ice Cream does not require an ice cream maker. I have made this dish in both the food processor and with a hand held blender – making this soft serve perfect for those who do not have space for extra kitchen appliances like ice cream machines. One taste of this Mango Banana Coconut Soft Serve and you may never buy store bought ice cream again 😉
Just make sure to eat it quickly or else you might end up with a Mango Banana Coconut milkshake – no complaints here 😉
Tender, fluffy and flaky homemade Vegan Biscuits made in a cinch without any butter or oil. Perfect for the holidays, alongside soup or stew, dipped in gravy, and (my fav) with jam and coconut cream in the morning!
Since I’ve been home in Toronto my whole routine has been shot out the window. And you know what? It’s kind of nice to have a nice change of pace and switch things up a bit! My chia-seed morning oatmeal has been swapped for pancakes, scrambles, monkey breads and fun family brunches. It’s been great…
Soft, sweet and moist Buttermilk Vegan Cornbread Muffins. This tender Cornbread makes the perfect breakfast with maple syrup and berries or serve warm as an appetizer with dinner.
Happy Monday everyone! Boy do I have a recipe to share with you today – I am in looooove with these bright Vegan Stuffed Peppers. Don’t they just exude summer and springtime? They are so comforting and healthy, these Vegan Stuffed Peppers have quickly become our new favorite meal around here. I love that they are…
TGIF friends!! Who else is happy the weekend is HEEEEERE!?! What a silly question! Let’s celebrate with some super, quick + easy Vegetarian Broken Spaghetti Risotto 🙂 This weekend, J and I are headed back to where we met in Lille, France.
