Girl!!! WOW!! Way to be!! Here I am thinking that vegan food is just light salads and fruit… when I went vegan for a few months I did it the totally wrong way… I ate hardly anything and got really bony and unhealthy… these meals prove that being a vegan can be totally nourishing and satisfying!! This is a stunning round up of awesome recipes Ceara! I think my 2 favs are the meatless stuffed pepper soup and the vegan Mac & Cheese. Mac & cheese is my ultimate comfort food! Well, that and chicken pot pie. I’m vegan in the products I use (hair, shampoo, etc) Working on the food =) Moving in the right direction…..eh (for the Canadian in you!)
