Can you believe that the summer is almost done? I can. The weather here has been unbelievably chilly for this time of year. Fall is-a-comin’ and to be honest
And now that the summer is coming to an end, I am looking forward to settling back into life in Belgium with J in our cozy little apartment together. In celebration of summertime, summer nights and the sizzling summer heat (which I never seem to get enough of) I am sharing with you one of my favourite Mango Banana “ice cream” recipes. I discovered banana ‘ice cream’ at the beginning of the summertime and quickly looked forward to this ice cold & naturally sweetened treat after a long run or day in the summer heat.
This Mango Banana Coconut Ice Cream could not be easier to throw together: the nutrient-rich frozen mango and bananas are magically processed into a soft serve ice cream that could easily compete with the “real thing” without the addition of traditional addition of cream, sugar and eggs. This refreshing creamy mango and banana dream is made even creamier and tastier with the addition of light coconut milk and a splash of vanilla for good measure.
And no need to worry, this Mango Banana Coconut Ice Cream does not require an ice cream maker. I have made this dish in both the food processor and with a hand held blender – making this soft serve perfect for those who do not have space for extra kitchen appliances like ice cream machines. One taste of this Mango Banana Coconut Soft Serve and you may never buy store bought ice cream again 😉
Just make sure to eat it quickly or else you might end up with a Mango Banana Coconut milkshake – no complaints here 😉
How do you guys feel about Eggplant?! I feel like it is one of those vegetables that people fall in loooove with once they’ve had it prepared the right way. Y’all know that I LOVE Eggplant (or aubergine to my friends in the UK). It’s the main ingredient used in my Vegetarian Bolognese and I used it…
Good ol’ rustic, creamy, perfectly spiced traditional Pumpkin Pie. There’s nothing quite like it this time of year. Are you a pumpkin pie fan? This Thanksgiving weekend I wanted to make a Pumpkin Pie that was just as creamy, pudding-y, silky and flavorful as the pumpkin pie my great-grandma, mamère, used to make. And this…
This Creamy Healthy Roasted Red Pepper Soup is based on my Roasted Tomato Soup recipe I shared a year ago! It is still one of my most popular recipes on the blog and one of my favorite soups to make in the kitchen. I thought it was about time I share my other favorite roasted…
Homemade Vegan Strawberry Shortcake made with only a handful of ingredients! The perfect strawberry shortcake comes together with ripe, juicy strawberries, fresh coconut cream and a tender, flaky biscuit.
Vegan Beef Bourguignon made with a hearty, meaty and incredibly flavorful mushroom and red wine reduction sauce. A simple and traditional French recipe that uses a handful of ingredients and gets its rich and deep flavours from simmering on the stove for at least two hours on a very low heat. The majority of the…
I kinda have an obsession with nut butter. I love everything about it – it’s creaminess, nuttiness, and the way that it tastes devilishly good slathered on practically anything. One of my favourite all-time energy boosting snacks is a sweet banana dipped and slathered with silky smooth almond butter. Even though I love almond butter in…
