Can you believe that the summer is almost done? I can. The weather here has been unbelievably chilly for this time of year. Fall is-a-comin’ and to be honest
And now that the summer is coming to an end, I am looking forward to settling back into life in Belgium with J in our cozy little apartment together. In celebration of summertime, summer nights and the sizzling summer heat (which I never seem to get enough of) I am sharing with you one of my favourite Mango Banana “ice cream” recipes. I discovered banana ‘ice cream’ at the beginning of the summertime and quickly looked forward to this ice cold & naturally sweetened treat after a long run or day in the summer heat.
This Mango Banana Coconut Ice Cream could not be easier to throw together: the nutrient-rich frozen mango and bananas are magically processed into a soft serve ice cream that could easily compete with the “real thing” without the addition of traditional addition of cream, sugar and eggs. This refreshing creamy mango and banana dream is made even creamier and tastier with the addition of light coconut milk and a splash of vanilla for good measure.
And no need to worry, this Mango Banana Coconut Ice Cream does not require an ice cream maker. I have made this dish in both the food processor and with a hand held blender – making this soft serve perfect for those who do not have space for extra kitchen appliances like ice cream machines. One taste of this Mango Banana Coconut Soft Serve and you may never buy store bought ice cream again 😉
Just make sure to eat it quickly or else you might end up with a Mango Banana Coconut milkshake – no complaints here 😉
How was your weekend? We took a trip to the Ardennes and enjoyed a relaxing weekend with J’s family in the woods near the villages of Durbuy and Barvaux. They are both two super adorable and quaint picturesque villages located in the French speaking part of Belgium. We went for a great hike, dined, drank…
This week has been a whirlwind as I try to complete the rest of my essays before the end of my semester in just a few short weeks. That same feeling of being a student always returns as the jumble for the end of the year arrives. It is that same feeling I would get…
Okay I swear I haven’t got #mushroomcrazy. Okay, maybe I have, but the mushrooms are just so gorgeous this time of year that I’ve been putting them in practically every savory dish I make lately. Including this savory, crispy, flavorful Vegan Walnut Mushroom Tart. #StepAsidePumpkin
If you’ve read this blog for a while you know that I love comfort food. After struggling with my health and weight almost my entire life, falling into almost every yo-yo diet possible (in case you’re wondering the cabbage soup and grapefruit diet don’t really work – trust me) and finally having the courage to…
These brownies are everything a brownie should be – rich, fudgey, thick, and full of chocolate. These dark chocolate brownies are melt in your mouth good. The best part about them is that they are much lower in sugar and oil than your typical brownie and do not use any added flour. A gluten-free, vegan…
Healthy Orecchiette Pasta Salad with Basil, Olives and Tomatoes… The fresher ingredients, the better in this Pasta Salad. This is one of my favorite salads to bring to Summer cookouts and it’s always one of the first salads to disappear! The flavours taste even better the next day once the flavors have had the chance to…
