Can you believe that the summer is almost done? I can. The weather here has been unbelievably chilly for this time of year. Fall is-a-comin’ and to be honest
And now that the summer is coming to an end, I am looking forward to settling back into life in Belgium with J in our cozy little apartment together. In celebration of summertime, summer nights and the sizzling summer heat (which I never seem to get enough of) I am sharing with you one of my favourite Mango Banana “ice cream” recipes. I discovered banana ‘ice cream’ at the beginning of the summertime and quickly looked forward to this ice cold & naturally sweetened treat after a long run or day in the summer heat.
This Mango Banana Coconut Ice Cream could not be easier to throw together: the nutrient-rich frozen mango and bananas are magically processed into a soft serve ice cream that could easily compete with the “real thing” without the addition of traditional addition of cream, sugar and eggs. This refreshing creamy mango and banana dream is made even creamier and tastier with the addition of light coconut milk and a splash of vanilla for good measure.
And no need to worry, this Mango Banana Coconut Ice Cream does not require an ice cream maker. I have made this dish in both the food processor and with a hand held blender – making this soft serve perfect for those who do not have space for extra kitchen appliances like ice cream machines. One taste of this Mango Banana Coconut Soft Serve and you may never buy store bought ice cream again 😉
Just make sure to eat it quickly or else you might end up with a Mango Banana Coconut milkshake – no complaints here 😉
Since I’ve been home in Toronto my whole routine has been shot out the window. And you know what? It’s kind of nice to have a nice change of pace and switch things up a bit! My chia-seed morning oatmeal has been swapped for pancakes, scrambles, monkey breads and fun family brunches. It’s been great…
Are you an AVOCADOOO fan?! I could put avocado in everything. Avocado in my guacamole, burritos, dressing and SMOOTHIES. One of my favorite ways to enjoy avocado is in this pretty light green CREAMY Avocado Smoothie.
Broccolini Pasta with a creamy, garlic-tahini sauce. Who here loves broccolini?! It is one of my favorite vegetables and I knew exactly what I wanted to do with it when this adorable baby broccoli arrived in our organic bin this week. Saute is with LOTS of garlic in a creamy tahini sauce and serve it…
Good ol’ rustic, creamy, perfectly spiced traditional Pumpkin Pie. There’s nothing quite like it this time of year. Are you a pumpkin pie fan? This Thanksgiving weekend I wanted to make a Pumpkin Pie that was just as creamy, pudding-y, silky and flavorful as the pumpkin pie my great-grandma, mamère, used to make. And this…
It’s almost that time of year again. Anndd who is in the mood for PUMPKIN?!?! It’s been almost a year since I shared my last Pumpkin Bread recipe so I thought it’s about time I start making #AllThePumpkinRecipes. And why not start with some Chocolate Chip Pumpkin Zucchini Bread?!
Have you guys tried Red Lentil Kofta before?! They were one of my favorite foods I discovered on one of my first visits to Turkey a few years ago. I instantly fell in LOOOOOOOVE with the perfect texture as well as the tasty, savory and flavorful touch of these lovely Mediterranean patties! Filled with red lentil, bulgar,…
