Chocolate Brownie Peanut Butter Macaroon Bites

Dry Ingredients

  • 1 and 1/2 cups shredded coconut (unsweetened)
  • 1/4 cup oats (quick oats – small ones) *make sure to get gluten-free oats if needed
  • 7 tbsp cocoa powder
  • 1/2 teaspoon sea salt

“Wet” Ingredients

  • 4 heaping tbsp peanut butter
  • 4 tbsp maple syrup or honey
  • 1 tbsp coconut oil
  • 1/2 cup milk of choice (I used cashew, but coconut milk would taste great in these)
  • splash vanilla (optional)

Instructions

  1. Pre-heat oven to 325ºf or 160ºc.
  2. Put dry ingredients in a medium size bowl. Mix.
  3. Put wet ingredients in a small bowl. Microwave for about 45 seconds to a minute. Take the bowl out of the microwave and mix together with a spoon until all the ingredients (including the peanut butter) are melted and creamy.
  4. Add wet mixture to the dry ingredients. Mix the dry and the wet together until you form a ball with the dough.
  5. Place macaroons by heaping teaspoon onto onto lightly oiled cookie sheet.
  6. Flatten cookies out slightly with your palm.
  7. Bake for eleven minutes.
  8. Voila! Enjoy!
