These Flourless Almond Butter Chocolate Chunk Cookies are so easy, healthy and delicious it’s not even funny.

Made with 7 simple ingredients: Almond butter, oats, ground flax seed, maple syrup, vanilla extract, baking powder and chocolate chunks + sea salt if you count that as an ingredient. Which I don’t because technically it’s a finishing touch. 😉

One bite of these Flourless Almond Butter Chocolate Chunk Cookies and I honestly couldn’t believe they are refined sugar free, flour free, gluten free, butter free, egg free and dairy free. Let’s be honest, sometimes healthy baking experiments work out and sometimes they end up tasting like cardboard. These Vegan Almond Butter Chocolate Chunk Cookies are just soooo right. 

When J got home from class, he tasted one and quickly reached for another and then another.  J will never say that he doesn’t like a recipe perse but he’ll take one bite of something and he’ll politely say that he’ll save the rest “for later”. Let’s just say there were none of these cookies left for later – period. You know a recipe’s good when it’s #boyfriendapproved 😉

These Flourless Almond Butter Chocolate Chunk Cookies are slightly crispy around the edges, chewy & soft in the middle, gooey, slightly sweet and are filled with rich, melty chocolate chunk puddles. They are SO perfectly comforting straight out of the oven or dunked into a big glass of almond milk. 😉 Happy Baking!

Flour Free Almond Butter Chocolate Chunk Cookies

Description

Flourless Almond Butter Chocolate Chip Cookies – chewy & soft in the middle, crispy around the edges & filled with delicious chocolate chunks! Secretly Healthy, Vegan & Gluten Free!


Ingredients

Scale
  • 1/2 cup + 1 tbsp oats*
  • 1/2 cup almond butter (room temperature + stirred very well)
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1 tbsp ground flax seed
  • 1 tsp baking powder*
  • 1/2 tsp sea salt
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup + 2 tbsp dark chocolate chunks

Instructions

  1. Preheat oven to 360F/180C. Line a baking sheet with a slipmat or parchment paper.
  2. Blend oats into a fine oat flour. Make sure your almond butter is stirred very well and there is no oil separating on top (if the almond butter is too oily it will result in an “oily” cookie and if the almond butter is too thick it will result in a cookies that’s too thick).
  3. Whisk together almond butter, vanilla extract and maple syrup in a large mixing bowl. One by one, add oat “flour”, ground flax seed, baking powder, sea salt and optional cinnamon to to the wet mixture.Whisk together until a thick cookie dough is formed (*the dough will be very thick).
  4. Fold in 1/4 cup dark chocolate chunks.
  5. Roll cookie dough into balls and place on cookie sheet and pat down with the palm of your hand (*leave an inch apart between cookies). Press a few chocolate chunks on top of each cookie.
  6. Bake in the oven for 9 – 11 minutes until the cookies start to turn golden brown around the edges.
  7. Leave to cool on the cookie sheet for 10 minutes before removing them from the pan. Enjoy the cookies dipped in some almond milk!

Notes

*Make sure all your ingredients are certified gluten-free if necessary
*Make sure to leave cookies to cool on the cookie sheet for 10 minutes to allow them to bind together!

    1. Hi Megan! I think that your sub you described should work (though I’ve never tried it!) because these are a pretty versatile cookie! I would add an extra tbsp of oats and maybe a half tbsp of coconut oil and see how that works. I’d love to know your results – please let me know how they turn out! Happy Baking!

  5. So easy and so good! I will definitely be making these again… and again 😉 However, next time I will be sure to have unsalted almond butter on hand and/or leave out the added salt from the recipe. Luckily dark chocolate tastes good with a little salt so they are still delish?

  6. These cookies Are absolutely delish! They taste just like the Chips Ahoy cookies that I used to love as a kid. I did add a tablespoon of stevia and a couple of tablespoons of peanut butter because I ran out of almond butter, other than that no changes. Thanks so much for sharing!

    1. Hi Stephanie, Flax adds a bit of moisture to these cookies as well as acts as a binder. You could try baking them without the flax or replacing the flax with an extra tbsp of oats – I cannot 100% vouch for the results because I’ve never tried this before.   7. Very good! I wanted to bake these on our snow day following the “Blizzard of 2015.” We trudged up to a little market on the avenue and found Bakers SemiSweet Chocolate Chunks. I was sure I had the other ingredients. When we got home I assembled my stuff on the counter and then I saw that the recipe calls for parchment paper, and I didn’t have any. I decided to take my chances and sprayed our well-seasoned cookie sheet with cooking spray. They slid off easily! Yay! My hubs asked if these were whole wheat, a phrase he usually utters with evident distaste. I said no, oatmeal. Oh, he said, and finished the cookie.

    1. Hi Christina! I’ve only ever made them with maple syrup so I’m not sure how other liquid sweeteners would work out! I would give agave syrup or honey a try (though honey will make these cookies no longer vegan) – I’d love to hear how they turn out! Happy Baking!! 😀

    2. I substituted the maple syrup with 1/2 c of coconut palm sugar (it has a lower glycemic index and I’m a huge fan of coconuts). I also substituted the chocolate chips with chopped dates (not as decadent as chocolate but added some sweetness and texture) and the cookies turned out great! Thanks for this recipe!

      1. Forgot… I added a little less than 2 tablespoons of almond milk because the dough was dry without the maple syrup.

  10. Hi Ceara – these turned out wonderful for us. I agree with your comment that it is important to have fresh and well stirred almond butter for the texture. Wondering if Wow Butter (soy butter) might work in lieu of the almond butter? That way I can send them to school for kids’ snacks! 🙂

  11. I wanted to bake cookies for my in-laws so I chose these but they did not come out good. They definitely don’t spread out on their own, they’re dry, and not that sweet. I followed the recipe word for word. I’ll still eat them as they are really healthy but I don’t like them enough to give them as a gift. I was bummed with these cookies :/

    1. Hi Rachel! Thanks for your feedback! I am sorry that your cookies did not turn out well – the cookies have always spread perfectly for me so I’m wondering what went “wrong”! I’m wondering if it’s due to the almond butter? The almond butter has to be runny (but not oily) and very well stirred for this recipe. I always double (and triple) check my recipes before posting them on here and will remake the recipe again today and get back to you 🙂 Thanks again for the feedback!

    1. Yes! When you grind your oats they become “oat flour”. If you already have oat flour on hand, I’d recommend using just a 1/2 cup! Hope you like the cookies – let me know how they turn out 🙂

  12. Hi these look amazing. I’m allergic to almonds. Could you substitute apple butter or just plain butter? My mom was just placed on a gluten free diet. I’m going to make them for her.

    1. Hi Amber, thanks for stopping by! I wouldn’t recommend using plain dairy butter or apple butter – the consistency is very different than nut butters and I’m not sure if it would work out. Are you allergic to all nuts? Peanut butter or sunflower seed butter would make an awesome sub! 🙂 Good luck! Let me know how they turn out!
