Who else is excited when strawberry season comes around?! The cardboarding tasting, picked-before-they-are-even-ripe-and-shipped-thousands-of-miles, strawberries available in Canada throughout the Winter are just plain sad, guys. I’m always SUPER happy when we start seeing the juicy, plump, sawwweett and flavorful strawberries in store and at the market again. I usually pass on the “fresh” strawberries during the wintertime and stick to frozen berries for my smoothies and sweets.

Luckily, for y’all, these Dark Chocolate Strawberry Scones can be made with either Summer fresh or ripe frozen strawberries all year long. When I saw ALL the fresh strawberries in store right now I KNEW I had to make you guys these rich, decadent and chocolate-y Dark Chocolate Strawberry Scones!

Well, scratch that, I first tried to make these with fresh raspberries buuuuuut I got lost in my own thoughts and forgot to add the baking powder. Has that ever happened to you before? It’s probably one of the worst baking feelings ever. Wasting LOTS of expensive ingredients and then realizing once the scones are already in the oven that as much as you pray, there’s no way they are going to rise! Guys, these scones will NOT turn out well with out the baking powder. It’s kind of an essential ingredients, lol! 😉 #BakingFail

It ended up working out well because I had fresh strawberries in the fridge waiting to be baked up into these now Vegan Dark Chocolate STRAWBERRY Scones. And friends, these Dark Chocolate Strawberry Scones sure are yummy 🙂

These Dark Chocolate Strawberry Scones are a lovely rich and decadent breakfast or brunch item (or tea-time snack if you have a huge sweet tooth like me!). They are easy to throw together and like my Lemon Blueberry Scones, use full fat coconut milk instead of butter. These healthier Dark Chocolate Strawberry Scones are made with only 8 simple ingredients (+ sea salt), have the perfect crispy exterior + soft and flaky interior and are FILLED with melty chocolate chips. They are sure to become a favorite in your home!

Description

These Dark Chocolate Strawberry Scones are healthier than traditional scones and made with full fat coconut milk instead of butter. They are perfectly crispy on the outside and soft and chocolatey on the inside. Make sure to not add too much coconut milk or you will lose the flakey texture and crunchy exterior desired in these scones!

  1. Pre-heat oven to 200C/390F. Line a pan with parchment paper and flour it or spray it with a non-stick cooking spray.
  2. Place spelt flour, cacao powder, baking powder, sea salt and cane sugar (1/2 cup) in a large mixing bowl. Stir together..
  3. With a spatula, make a well in the middle of the mixing bowl by moving the flour mixture to the edges. Add the vanilla extract and 3/4 cup of the coconut milk into the middle of the bowl. With the spatula (or clean hands) combine the flour into the wet ingredients. If the dough is too dry add a bit of the coconut milk by the 1/2 a tbsp until it is fully combined. Do not add too much liquid or the scones will not hold together and will get more muffin-like (I added an extra 2 tbsps). I like to do this part with my hands to get the dough fully combined. Try your best not to overwork the dough or your scones will be too dense. Gently fold in 1 cup of the chopped strawberries and 1/2 cup of chocolate chips.
  4. With slightly damp hands (so the dough will not stick to your hands), place the dough onto the parchment paper. Shmoosh and shape the dough into a flat circle about 9.5 inches/24 centimeters wide. The dough will be a bit sticky, but that’s okay.
  5. Sprinkle the remaining strawberries (1 tbsp), cane sugar (2 tbsp) and chocolate chips (2 tbsp) onto the scones. With a share knife, cut down the middle of the scones on both sides of the circle, 4 times, until you have 8 equal slices (see photo).
  6. On the middle rack of the oven, bake the scones for 18 – 25 minutes. They are ready when they are fully cooked in the middle. Leave them to cool fully before removing them from the pan. Cut into the 4 slices you made before baking so the scones will separate easily Enjoy!

Notes

1) Make sure your baking powder is aluminum free, this ensures that you don’t have the baking powder after-taste.
2) Substitute Cane Sugar for Regular Sugar.
3) Leave the scones to cool fully on the pan before removing them.
4) Substitute Light Spelt Flour for All Purpose Flour or White Whole Wheat Flour.
5) Make sure your strawberries are fully dried off before using them in the scones. If using frozen strawberries, carefully chop the strawberries with a sharp knife while frozen. Do not defrost them before adding them into the scone batter.

    1. Hmmm, I’ve never tried a GF flour mix with these but you could give it a shot. I’ve only made these with spelt, all purpose and light whole wheat flour with good results. I am really not sure if a GF flour mix would work. Let me know if you end up trying it!

  7. The other day I accidentally added salt instead of sugar to a recipe and didn’t realize until it was finished, it was horrible! I hate when things like that happen! Raspberry chocolate scones would be good, but strawberries are some of my favorite fruits so I’m glad you used them! These look awesome 🙂
