Oat Flour Vegan Pumpkin Banana Bread

This dense and flavourful bread provide you with a healthy does of pumpkin, banana and oats. It  also gives you an amazing energy boost in the morning or as a snack in the mid-afternoon!

This pumpkin banana bread is my go to staple during the week. It is super fast to whip up, filling, and tasty πŸ™‚ I usually smother it in a bit of peanut butter and bring it with me to class πŸ™‚
 
 
 
Other reasons why I love this loaf are that it is vegangluten-free (if using gluten free oats), filling, and it fills our entire apartment with a beautiful pumpkin-spice scent while baking! I cut this loaf up after baking, usually eat a slice (or two) and then stick the rest in the fridge to enjoy during the week πŸ™‚ Hope you enjoy this loaf just as much as I do! πŸ™‚

Pumpkin Banana Bread (Just Oats)

Ingredients

Scale
  • 3 cups Oatmeal
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/2 tsp Nutmeg
  • Chia Egg 1 tbsp Chia Seeds + 3 tbsp water
  • 2 Ripe bananas
  • 1/2 cup pureed pumpkin
  • 1 tbsp melted coconut oil
  • 1/4 cup + 1 tbsp Cane Sugar
  • 1 tsbp Honey
  • 1 tbsp Apple Cider/White vinegar
  • 1/3 Cup Sliced Almonds (optional)

Instructions

  1. Pre-heat oven to 350ΒΊf or 180ΒΊc
  2. Soak 1 tbsp of chia seeds in 3 tbsp of water. Leave the chia seeds to turn into an “egg-like” gel while preparing dry and wet ingredients (about 5 minutes)!
  3. Blend oats until they create a flour like consistency. Measure out 2 cups of oats. Voila. Oat flour!(you will have a bit left over, I save mine for the next time I need it!)
  4. Put dry ingredients {Oatmeal through to Nutmeg} in a medium size bowl. Mix until spices are evenly dispersed..
  5. Mash Banana and Pumpkin together in large bowl. Add other wet ingredients {Chia egg through to Vinegar} to pumpkin-banana mixture (including chia egg). Whisk together until very smooth.
  6. Add flour mixture to the wet ingredients. Fold the wet ingredients into flour mixture. Fold until everything is well combined. The dough will be thick!
  7. Fold in the sliced almonds (optional)
  8. Spread in loaf pan
  9. Bake for 35 minutes or until toothpick comes out almost clear.
  10. Let sit for 20 minutes. Voila! Enjoy!

Notes

  • If you do not have cane sugar on hand use white or a light brown sugar. If you are out of vinegar – you can just leave it out altogether (bread will just be denser)!cIf you don’t have any coconut oil on hand you can also use walnut oil, canola oil, peanut oil or even olive oil Let this cool down completely before cutting , you will get a much better “cut” to your bread!
  • Nutritional Benefits: Very high in Vitamin A manganese, phosphorus, and fibre. There is no cholesterol and also provides a healthy dose of iron!

10 day yoga challenge!
 
After a weekend of brownie testing I thought it was time to make some new goals for myself that involve bettering my body and mind. I mentioned in a couple of my previous posts (see running and my journey) that I love doing yoga. I do yoga about 4-5 times a week at home, sometimes for 10 minutes or sometimes for 30 minutes or more. My goal is to do yoga, everyday for the next 10 days, to get my body and mind in check for all this work I have to do for my Master’s! Here are some of the videos I practice and cherish! I’ll let you know my results after completing this ten day venture of mine and share with you some other videos I will have come across in my journey!
