Because everybody could use some salad and greens after ice cream, Cinco de mayo and Mother’s day all in the span of one week. What have you guys been up to?! J’s family came to visit this past week from Belgium and we had an event-filled week visiting Toronto, laughing over good food and aperitifs in the evening (that vegan bacon though…), and celebrating J’s birthday. And now my body and mind are ready for some salad.

And dig in!! I told you this Avocado Cucumber Salad could not get any easier.

I like to leave the salad to “marinate” for 5 to 15 minutes while I prepare the rest of dinner. The flavors of the creamy avocado, refreshing cucumber, tangy lime, cilantro and sea salt come together and complement each other just perfectly. The avocado seems to get creamier and the lime tangier the longer everything sits and the flavors mingle. Description

Refreshing, bright and tangy Avocado Cucumber Salad. Ready in less than 10 minutes with a simple lemon-lime, cilantro dressing.


Ingredients

Scale
  • 1 large cucumber, sliced in quarters
  • 2 avocados, chopped
  • 1/41/2 cup cilantro, chopped
  • 3 tbsp lemon juice
  • 2 tbsp lime juice
  • 1/2 tsp sea salt

Instructions

  1. Place chopped cucumber, avocado, and cilantro in a medium bowl. If you are not a fan of cilantro, start with using only 1/4 cup.
  2. Add lemon juice, lime juice, and sea salt to the chopped vegetables. Toss gently to combine. Taste and add additional cilantro (I use the entire 1/2 cup) and sea salt to taste. Leave to sit and “marinate” for 5 – 15 minutes. Serve fresh with your favorite Summer meal.

  2. I’ve been making this for years but I just use the juice of a fresh lime, no lemon and I also add cherry tomatoes sliced in half, it’s so delicious…I actually use garlic salt rather than sea salt, it;s always a hit. Even if you don’t have cilantro, it’s still delicious and so simple!

  3. This looks SO good! I wish my sweetheart could swallow cilantro. Fortunately, I love the stuff and this salad will make a wonderful lunch a few days this week, along with a quick veggie wrap. Pinning.
